Tasteful Tuesday - SQUASH-tastic!

Sausage Filled Squash: A great Fall-Time Meal

A girlfriend of mine made this for us after Addie was born so I just had to make it when my sister Janet came over for dinner the other night (she's in town from NYC, the one who is the style editor and co-founder of Verily magazine) because it's gluten free AND sooooo AMAZING! 

Halve and scrape out seeds of any large squash.  I used butternut and spaghetti squash but I think the recipe calls for acorn and/or spaghetti.
Spread a Tablespoon of butter on the insides of each.  
Align in baking dishes and add a half cup of water or so in the bottom of the dish.  I tried cooking them face down in the water and they cooked faster but I usually cook them right side up.  
Bake at 350 for 1.5 hours (give or take).
In the meantime, brown a pound of Sweet Italian Sausage (I buy links and take off the casings).  Set aside.
Sautee One Large Onion in the same sausage pan.
Add one or more large peppers, any color.  
Add 1.5 cups mushrooms.
Add 3 cloves of garlic.
Sautee until all veggies are soft. 
Stir in the cooked sausage.
After the squash is barely soft to the touch and has come out of the oven, prick and gently scrape some of the squash out of the skin with a fork.
Add the sausage filling.
Grade some Parmesan over the filling.
Bake again until cheese is melted and filling is warm.  
Salt and Pepper (and hot sauce or red pepper flakes) to taste.
Enjoy with gluten free friends or those of us who haven't gone to the dark side given up bread!

    1. You are so sweet! Cool, you will have to try it, but I mean how can you go wrong with something that's pretty much like pizza, but with a different base, haha! Miss you and those cute babies of yours!
